One of the fixed patterns that accepts -기 and nothing else. Swapping in -는 것 here is ungrammatical, not merely unusual.

When to use it
Attach -기 to any plain stem and follow with the adjective: 읽기 쉬워요, 발음하기 어려워요. There is no vowel rule, ㄹ stays, and tense never appears in front.
Both adjectives are ㅂ irregular, which trips learners more than the pattern itself: 쉽다 gives 쉬워요, 쉬웠어요; 어렵다 gives 어려워요, 어려웠어요.
The same slot takes a family of other adjectives: -기 좋다 (good for), -기 힘들다 (tough to), -기 편하다 (convenient to), -기 싫다 (don’t feel like).
The particle 가 is optional and adds a little emphasis: 읽기가 쉬워요.

This pattern is locked to -기. -는 것이 쉬워요 is not an alternative phrasing; it is simply wrong.

-(으)ㄹ 수 있다
-기 쉽다 rates the difficulty of a task; 수 있다 says whether you are able to do it at all.
읽기 쉬워요. (it’s easy to read) / 읽을 수 있어요. (I can read it)
-기 싫다
The same slot, but about willingness rather than difficulty. Useful and very common in casual speech.
일어나기 힘들어요. (it’s hard to get up) / 일어나기 싫어요. (I don’t want to get up)

이 책은 읽기 쉬워요.
쉽다 and 어렵다 take only -기. The same goes for 좋다, 편하다, 힘들다, 싫다 in this pattern.

쉽다 and 어렵다 are ㅂ irregular. The ㅂ becomes 우 before a vowel ending: 쉬워요, 어려워요, 쉬웠어요.

-기 never carries tense. The past goes on the adjective at the end.
