배우다 vs 공부하다 vs 익히다
learn (from someone) · study · master, get the hang of
배우다 is learning from a teacher or taking lessons, 공부하다 is studying at a desk, and 익히다 is practicing something until it is really yours.

How they differ
1. Skills are learned, not studied. For piano, swimming, driving, dance: 수영을 배워요 ○ / 수영을 공부해요 ✕. English speakers can say “study piano”, but in Korean 공부하다 makes it sound like theory from a book.
2. A teacher in the sentence means 배우다. 선생님한테 한국어를 배웠어요 (I learned Korean from a teacher) ○ / 선생님한테 한국어를 공부했어요 ✕. Studying alone is 공부하다: 혼자 한국어를 공부해요 (I study Korean on my own).
3. “Learn” for a test is 공부하다. 시험 때문에 공부해야 해요 (I have to study for the exam) ○ / 시험 때문에 배워야 해요 ✕. A school subject or major also takes 공부하다: 대학교에서 경제학을 공부했어요 (I studied economics at university); 배웠어요 is possible there but only means it was taught to you.
4. 익히다 is about practice and familiarity. 사용법을 익히다 (get the hang of how to use it), 일을 손에 익히다 (get the job into your hands). You can’t do it “from” someone: 선생님한테 익혔어요 ✕. In speech, 배우다 or 외우다 (memorize) is often more natural for everyday learning.

One step further
익히다 has a second, unrelated meaning: to cook food through, as in 고기를 잘 익혀 주세요 (Please cook the meat well). For skills you can already do, use -(으)ㄹ 줄 알다: 수영할 줄 알아요 (I know how to swim). To talk about trying something new, use -아/어 보다.
Common mistakes
요즘 피아노를 공부하고 있어요.
요즘 피아노를 배우고 있어요.
Taking lessons in a skill like piano or swimming is 배우다; 공부하다 sounds like studying music theory from books.
김 선생님한테 한국어를 공부했어요.
김 선생님한테 한국어를 배웠어요.
When you name the teacher with 한테/에게서, only 배우다 works.
내일 시험이 있어서 오늘 밤에 배워야 해요.
내일 시험이 있어서 오늘 밤에 공부해야 해요.
English “learn for a test” is 공부하다 in Korean; reviewing on your own is studying, not 배우다.
